The raw syrups were collected independently from each process, centrifuged at 4000 rpm for fifteen minutes, filtered through two flashes of Whatman No. 41 filter paper, and then concentrated in a rotary evaporator at 70 degrees Celsius and a microwave to approximately 72 Brix.

The date syrup that was produced was placed in glass bottles, hermetically sealed, and placed in the freezer until it was ready to be used.

There were no significant (p 0.05) differences between the rotary evaporator and microwave methods in dry matter, total sugars, and reducing sugars extracted from date flesh using the various extraction methods tested.

The dry matter, total sugars, and reducing sugars extracted from date flesh were, respectively, 89.99%, 77.70%, and 75.2%.

The majority of the sugars in the Saidy type of date (75.2%) were considered to be reducing sugars. It was determined that the date flesh contains a total sugar content that is 2.50% of its total, which led to the discovery of a sizeable quantity of non-reducing sugar.

In the meanwhile, observations of non-reducing sugars revealed variations that were statistically significant (p 0.05).

Within each row, this indicates that the individuals with the same letter do not differ from one another significantly (p 0.05). All of the extraction techniques were utilised to ascertain the sugar content.
