Prepare the oven by preheating it to 190 to 200 degrees Celsius (375 to 400 degrees Fahrenheit or 170 degrees Celsius fan oven or gas mark 5 to 6 on the middle rack, 4 to 5 on the top).

If your pans are shiny, they reflect heat and so take longer than dark tins to cook; nevertheless, this has never been a problem for me!

Flour, baking powder, bicarbonate of soda, salt (if using), and cocoa should be sifted together in a large basin before proceeding. If you’re using chocolate chips or walnuts, add them now. Set aside.

In a separate bowl, use a fork to whisk the eggs. Add milk, vanilla, and oil. Take the dates away from the fire and mix them until you have a smooth paste.

(You could mash them with a fork instead of a blender if you don’t have a blender, but this will result in texture.) Add dates to wet ingredients.

Combine the entirety of the wet and dry ingredients. Stir until the ingredients are barely blended; the batter will look lumpy, which is quite normal.

The mixture must slide off the spoon without any difficulty. If it doesn’t, add a bit more liquid.

Place in cans with a spoon. Bake for around 15 to 20 minutes if the size is smaller, and for 20 to 25 minutes if it is the regular size. When they are ready when the tops spring back after being pressed.

You’ll find it much simpler to remove them from the tins after allowing them to cool for about five minutes first. Make sure to prepare the liquid components independently from the dry ones, and combine them as little as possible.
